CLIFTON PARK — Spice Malabar knows how to bring the heat.

The eatery, which is tucked away amidst Five Guys, Moe’s Southwest Grill and other chain eateries in Shops at Village Plaza, offers a lengthy menu inspired by traditional Indian cuisine.

It’s owned by chef Vince George, who grew up in India and also owns Karavalli in Latham — no relation to Karavalli Saratoga. He opened Spice Malabar in 2021 after an extensive renovation process. The dining space is modern with vibrant murals adorning the walls.

Over the last few years, it's become known for its popular lunch buffet, as well as its dinner menu, which features dishes inspired by both Northern and Southern Indian fare.

The Gazette recently caught up with George about the business and what’s changed since it opened.

Question: What made you want to open Spice Malabar?

Answer: Many of our [Karavalli] guests, including the Agrawal brothers of Levrx [in Troy] mentioned to us that Saratoga County was lacking our cuisine and missing something special and authentic. We mentioned to a realtor — also a guest — to find us a place in Clifton Park, because of [its] welcoming community of small businesses.

Q: How has it changed since you first opened?

A: We opened during the pandemic — a time when there was a lot of uncertainty for local businesses. The majority of our business three years ago was from takeout, with guests coming into our beautiful dining room for a few seconds to get their food and leave ASAP.

When things started to go back to normal, more and more guests began dining at our cozy restaurant and bar. As a result, we now also cater to weddings and corporate luncheons with GlobalFoundries, Regeneron, GE, etc., and celebrate Diwali (Festival of Lights).

Q: What are some of Spice Malabar’s most popular dishes?

A: Chicken makhani (butter chicken), chicken tikka masala, palak chaat, vegetable samosa, tandoori chicken and chicken malai kebab, garlic naan, vegan masala dosa. [And] who can forget, shrimp mango curry, mango lassi, and tamarind punch.

Since we have a fairly large vegan menu, we have a lot of vegan [dishes] we truly enjoy.

Q: How would you describe the atmosphere?

A: The restaurant recreates an ambiance that gives guests a feel for Indian culture. The custom decor and hand-crafted interior spaces are flooded with natural light by day, and by night the restaurant’s profusion of ambient glow and music will provide much intimacy to the dining experience.

Q: What do you feel makes Spice Malabar unique?

A: We know Indian cuisine and therefore have a lot to offer. Our chef specials created by our team are a must-try. Our mixologists spent a ton of time creating specialty cocktails, mocktails and wines that pair well with what you are eating.

Moreover, we truly care about our guests and treat them like family. We bring that personal touch.

Q: As far as cost goes, what are customers typically spending there for lunch? What about dinner?

A: The lunch buffet is $12.95 on Tuesday through Friday. The Saturday and Sunday brunch buffet is $17.95. Lunch boxes to-go are available during lunch hours for $12. For dinner, guests typically spend between $30 to $45.

Q: Is there anything else you want customers to know about Spice Malabar?

A: Don't be afraid to come try us out. We have had many guests come in through our door not knowing anything about the cuisine. They are now regulars and are experts.

Our buffet gives guests the opportunity to try different dishes and get a feel for what the cuisine is all about.
